Little Wolf Coffee

Here we have a beautiful expression of a washed Ethiopian coffee. At 8 days post-roast I brewed it on V60 which revealed a tea-like, sweet coffee with floral aromas, fresh raspberry and soft grape candy notes. The citric acidity is present but softly so and the mouthfeel is creamy yet delicate on the palate. It’s a lightly juicy presentation with freshness throughout and a lime-like finish. On the Origami with a kalita filter the florals showed off as lilac and violets, the flavor notes skewed towards pink grapefruit, fresh red grapes and a tea-like backbone of currant jelly. Days later it only got better, and if you tweak the brew just right it shows off chocolate flavor notes too. Oh and watch for that cassis note - it’s a stunner.
