This is a nicely balanced coffee with sweet syrupy notes of date bars, fresh apples and almonds. Warm spices of cinnamon, vanilla and tea are supported by the deep caramel sweetness.

This is a silky light coffee when brewed at 0.06 ratio with a faster filter. The balance of acidity and sweetness is perfect: red apple acidity and caramel. What’s better than that? The slightly nutty pecan flavor softens the acidity and gives the brew a pecan pie overtone but only faintly. Coptic Light coffees are refined, delicate and balanced. This is a perfect example.

Note: Coffees from Peru are getting better and better and are getting more widespread attention among specialty coffee roasters. Long known for producing organic and fair trade coffees, the potential for specialty coffee (arabica) is great with the altitudes of the Andes Mountains and ample shade forests.
