What’s striking with this coffee is the complex acidity offered by the juices of so many fruits. Overall the effect is one of tropical hues and candy-like sweetness but wait there is so much more. Fresh pineapple wafts up at you with a brilliant maraschino-like cherry flavor note immersed in a satiny juicy mouthfeel. And then the violet-lavender florals emerge punctuated by a pomegranate-hibiscus finish and a clean, sweet aftertaste. As a Gesha natural this one shines with complexity and brilliance. I found myself thinking: it’s like drinking rubies.

Notes: I brewed this several times and each day post-roast it only got better. Flavors on V60 were pineapple, kumquat, apricot, white grape, banana and cherry immersed in complex acidity.

Roaster notes: This special Gesha offering comes to us from Inmaculada Coffee Farms, in the village of Pichindé, located within the state of Valle del Cauca, Colombia. After several years cultivating a mountainside forest on their family farm, the Holguin family now grows an array of coffee varieties known for their unique cup qualities. Their farm’s location is ideal for coffee cultivation; in terms of weather, altitude, and annual rainfall. They began farming on 5.12 hectares and they now have around 50 hectares, of which 30 are cultivated, and the remainder is kept as a natural forest.
