Camber Coffee - August 2022 Release
The rich sweetness of dark chocolate infused with black cherries in the profile of this coffee made me think of chocolate cherry cake. There is a very nice tangy quality that punctuates this coffee adding interest. Notes of black currant and plum juice acidity complete the picture of a entirely satisfying cup of coffee. I liked the brew best on Origami with a V60 filter and a TBT of 3:10 at a 1:17 ratio.
Notes: This coffee reminds me of another coffee I reviewed earlier this year (roasted by Koppi) - a honey process coffee from Costa Rica. Read it here.
Roaster notes: Rafael Rivas, a native of Paez, lives with his wife and youngest daughter on their farm, El Barranco. The farm is located in Inzá, a municipality of the Cauca department. Cauca is home to some very high altitude farms, many breaching the 2000 meter mark. Rafael’s farm showcases the impressive complexity and sweetness of coffees from the area.
