This decaf coffee is sweet with flavors of mulled berries and dark chocolate. The mouthfeel is pleasant and lightly syrupy. The acidity is low so as it cools the aftertaste flattens slightly but not so much as to be detrimental. Overall its a well made coffee that holds its sweetness and flavor as it cools and for a decaf that is very commendable.

Per the website: Decaf coffee has a bit of a bad reputation, but this tasty coffee from Tolim is turning heads. Using the organic compound, ethyl acetate (naturally derived from sugar cane), the caffeine is stripped from the coffee bean during processing, leaving all the original flavors intact. The result is a juicy, sweet, fruit forward coffee that has less than 1% of its original caffeine content.

Note: Decaffeinated coffees can be processed many different ways. This one uses ethyl acetate which sounds synthetic but is, in fact, naturally derived from sugar cane. Because the decaffeination process is completed at the mill, before drying and roasting, it allows more flavors to remain intact compared to other processes used for decaf coffees.
