Elegant and light on the palate with refreshing berry flavor notes, this coffee shines in the realm of coffee quality. It presents with raspberry notes and lavender florals, cherry syrup and hints of cola and vanilla in a structured brew with an undertone of creamy lemon acidity that brightens gently. Harmonious, elegant and lightly juicy are qualities that can be ascribed to excellence in production, post harvest processing and execution of roasting.

Note: I brewed this at 11, 18 and 26 days post roast and got beautiful results with no noticeable dulling of flavors or acidity. My preferred brew was on Origami with a V60 filter at 21/340 grams and a TBT of 3:54. I have reviewed here , here and here other coffees from Yobani Ramos of Colombia. She’s a stellar producer of fine coffees who strives for healthy soils and biodynamic farming principles.
