Perfumy aromatics, subtle notes of black cherry juice and citric acidity complement the deep sweetness in this delicate coffee. The mouthfeel is lightly syrupy and the aftertaste lingers on and on. Subtle astringent-like almond skin notes and sweet nutty aromatics reminiscent of roasted hazelnuts balance each other. As it cools the flavor notes are more apparent and the finish is clean with vanilla sweetness and gooseberry-like juiciness.

The flavors of this coffee are so well integrated that they are difficult to tease apart though they are there and worth noting. Taken as a whole this coffee strikes me as having the quality of a Negroni cocktail - sweet, citric and bitter in perfect balance so that you want to keep on sipping. With the right brew method and some time for your cup to cool much will be revealed to you. Highly recommended.

Roaster notes:

Ines Perafan’s farm is located near the township of Puerto Lleras, Huila, Colombia. She and her 19 year-old daughter Sandra work on the farm together, tag-teaming between household chores, cooking for the family and processing coffee. All of the de-pulping and fermenting is done on the farm before bringing coffee down to their home closer to town.

After picking, Ines floats the coffee in water to remove the over- and under-ripe cherries. From there, she leaves the cherries to start the initial fermentation process (we call this a “cherry ferment”) in a plastic bag for 12-24 hours. She’s careful to keep the bags with cherries especially cool during this initial fermentation period as warmer weather can cause the fermentation process to progress too quickly and impart a funky quality to the coffee.
