This coffee confers the sweetness and viscosity characteristic of honey process coffees from Costa Rica. It is syrupy and sweet with enough lime acidity to balance the cup. Flavor notes of peach jam, cherries, nougat candy, and vanilla and a cane sugar cola sweetness.

Roaster notes: This particular coffee is a relatively new variety called H17 which resulted from a cross of Catuai and ET59A2 (itself a cross of Timor Hybrid CIFC 832/2 x Villa Sarchi).

Notes: I visited the farm of Volcan Azul on a trip to Costa Rica in 2017. The work of this family to achieve high coffee quality was evident in the fields and in the post-harvest processing facility. They have their own micro-mill so that coffee can be brought in immediately after harvest for processing which eliminates the problem of coffee cherries deteriorating on the way to an off-site processing facility.
